High-protein twist on classic breakfast Poha.

Fluffy Poha with Roasted Peanuts

Ingredients: 1.5 cups poha (flattened rice), a handful of peanuts, 1 small onion (chopped), 1 green chilli, mustard seeds, tarka red chilli, turmeric powder, salt, a squeeze of lemon juice, and a fresh cucumber for serving.

Step 1: Place the poha in a strainer and rinse it gently under running water for a few seconds. Toss it lightly with a pinch of salt and turmeric powder, then set it aside to soften.

Step 2: Dry roast the peanuts in a pan until crunchy and golden brown, then remove and set aside.

Step 3: In the same pan, spray a little oil. Add mustard seeds and the whole dried red chilli. Once they splutter, throw in the chopped onions and green chilli, sautéing until the onions turn translucent.

Step 4: Turn the heat to low, add the softened poha, and mix everything gently so the grains don't break. Cover and let it steam for 2 minutes.

Step 5: Turn off the heat, mix in the roasted peanuts, and squeeze fresh lemon juice over it. Top it with some cool, diced cucumber on the side for an extra fresh crunch!

  1. Spiced Sautéed Paneer Slabs

Ingredients: Thick paneer slices, Kashmiri red chilli powder, chaat masala, a pinch of turmeric, and salt.

Step 1: Cut your paneer into clean, flat slabs.

Step 2: Season them directly with a dusting of Kashmiri red chilli powder, chaat masala, turmeric, and a tiny pinch of salt.

Step 3: Heat a pan on medium-high with a light oil spray and sear the paneer slabs for about 1 to 2 minutes on each side until they get those beautiful golden-brown grill marks.

Adding paneer and peanuts to poha completely changes the game—it keeps your blood sugar stable and keeps you full for hours.

Today's breakfast volume bowl. This protein combo keeps me full for hours🌱✨

It’s super refreshing, packed with crunch, and takes almost no time to put together if you have your ingredients prepped.

What’s inside the bowl:

The Protein Powerhouses: Golden pan sauted soya chunks, perfectly spiced sauted tofu cubes, and hearty black chane.

The Fresh Crunch: Chopped onions, crisp cucumber, and juicy tomatoes arranged around the sides.

The Dressing: A generous, smooth dollop of fresh curd right in the center to tie all the flavors together.

How I Prepped It:

Sauté the Tofu & Soya Chunks: Toss your tofu cubes and rehydrated soya chunks in a pan with a tiny spray of oil. Season them with your favorite spices (like red chilli powder, chaat masala, or black pepper) and sauté for a few minutes until they get a nice, crispy exterior.

Assemble: Layer the chopped raw veggies (onion, cucumber, tomato) and the black chane in neat sections around the bowl.

Finish: Fill the remaining sections with your warm sautéed tofu and soya chunks, then top the center with chilled curd.

Can’t get over how satisfying this macro bowl turned out. Rate my plating

What’s in the bowl:

The Base: Boiled chole (chickpeas) sauteed

The Veggies: Sauteed bell peppers, raw chopped onions, juicy tomatoes, and crisp cucumber arranged around the sides.

The Protein Boost: Perfect little cubes of pan-sauteed spiced paneer.

The Secret High-Protein Sauce:

Instead of using store-bought dressings that are loaded with calories, I experimented and made a custom creamy sauce. I just blended half of my sauteed bell peppers, a few pieces of paneer, a couple of spoons of curd, black salt, and black pepper powder.
