Why is cooking bacon and potatoes so hard for me??

I feel like I’ve mastered cooking just about everything else in my carbon steel pan, but I always struggle with bacon and potatoes. What happens is I’ll cook the bacon first and I’ll get a few small bits that get stuck to the pan. Then as soon as I add the potatoes, more and more just gets stuck on. I didn’t add any oil because I figured the bacon fat should be enough. Is there any way to prevent this?

I gave my variegated yucca a trim but I’m thinking of removing it all together. Are they hard to remove? I’m worried because there is a water line nearby
