First time Vortex user - Made me a believer

Garlic Parmesan wings and drummies from the local grocery store. Patted them dry and lightly dusted them with Double acting baking powder only to find out it contain aluminum sulfate, which is frowned upon due to a possible metallic aftertaste. Oh well. Then set them on a grid and into the fridge for an hour or so.

I had half a Vortex of B&B charcoal going with the top and bottom vents wide open. The internal kettle temp quickly rose to 525f so I put the wing on around the perimeter and tossed a chunk of apple wood into the fire.

The AI book says no need to flip them since the Vortex radiates heat both over and under the wings. No peeking, no flipping no spritzing with oil. Cook time at that temp should be around 40 to 50 minutes so no need to peek.

At 30 minutes I couldn't wait any longer, so I opened the lid and probed the wings. They were crispy on the outside and 200f inside. Wow! that was fast. I scooped them all off the grill and onto the rack.

Note to noobs like me: Don't reach directly over the center of the Vortex, walk around if you need to touch the wings. That thing is blasting hot air straight up. It's hot enough to curls your hair.

Final results: The skin was evenly crispy on all sides, no need to flip them. At 550f and 30 minutes I'd call them they're done. Even at 200 internal they were still very juicy with no dry spots. I feel that even waiting another 10 minutes would not have changed much, maybe a little crispier. The skin was not rubbery at all.

An hour after the meal, I'm noticing that metallic aluminum sulfate aftertaste. I wish I had known about that before I got started.

Next time I'll try a different baking powder without aluminum and a lemon pepper dry rub on naked wings. At $10 for 24 wings, I can experiment.

Vortex question, which way and when? Big opening up or down?

I'll be buying one soon and have seen fellow Weber users use them both ways as if one way is the only way.

What's your preference? Based on wings or steak?

Are these corosex chunks in my pH adjuster tank?

I've been using calcite with a corosex mix for many years and i found these treasures inside the tank. My 20 year old tank has a developed a leak at the base so Ill be replacing that and cleaning/new O-rings in my Fleck 2510 control valve. I'm thinking I need to adjust the duration of the backwash and do it more than every 6 days. These chunks are hard like rocks.
