Falafel on a bed of kale and mixed greens, chickpeas, picked onion, avocados and some kind of delicious mess of dressing 🥗

I cannot take credit for making but this is a weekly lunch grab

Grilled chicken, roasted chickpeas, picked onion/cucumber, tzatziki, romaine lettuce, long grain rice, and ginger tahini dressing.

Dressed down today but I’m too sick today to care 🤧

Ground turkey taco salad, topped with corn salsa

Corn salsa - 1 can corn (I like to fry it up on the pan to give it a little sear), 1 small chopped red onion, 1/2 red bell pepper, 1 jalapeño, 1 tbsp cilantro, juice from 1 lime, salt, pepper.

Dressing - 1 container plain Greek yogurt, 1/4 cup medium salsa, juice from 1 lime, 1 tbsp cilantro, and a dash of cumin/salt/pepper. Mix together well, or use a blender if preferred.

Thinking of him, although not in a mournful way; but it’s been almost a year already since he passed and I was thinking about him a lot today. 🌈 🐶

I had to remove and repost because I put the wrong year in my last title. Oops 😅
