Ideas for saffron risotto with mussel meat

Looking for ideas for vegetables that go well with mussel meat. Most risotto recipes with mussels and saffron are quite simple, and don't venture deeper into vegetable world than onions/garlic, maybe leek, maybe green peas.

I have saffron that I only use for paellas, and I miss more ideas to use it.
