How do you NOT undereat?

Hi, I’m someone who has gained weight recently after being skinny my whole life - and I am in the overweight category of BMI now. When I was skinny I maintained the weight by doing 2MAD unintentionally, and I still eat that way but it isn’t enough. I am considering trying OMAD, and possibly limiting/cutting carbs, but I am worried that cutting them would make my daily intake way too little. I have dabbled once or twice with OMAD before but no matter what I did, I couldn’t eat more than a normal meal’s worth of calories. Back then the maximum amount I could eat at one sitting was 1000 kcals, and that was with carb consumption. For reference, I am 158 cm (5’2) so I am quite short, and around 72 kg (159 lbs), and my maintenance calories were at 1700 kcals when I got it measured at a dietitian’s office.

I want to limit my carb intake for health reasons, but idk how I wouldn’t undereat that way. It would be much appreciated if you guys had any tips.
