I want to make a sauce out of my lamb shoulder chop braising liquid

What's the best way to do that? Should I strain out the solids? So far I've used red wine, stock, carrot onion celery garlic and rosemary. I've read somewhere some people use Sherry. That sounds yummy and what kind of Sherry should I get? Thank you!

Making gravy from lamb shoulder chop braising liquid?

Hi everyone. The chops are just about done and I would love to make a nice gravy for the lamb and mashed potatoes using this liquid. I used red wine in stock for the braising liquid. How could I make it more flavorful and with a thicker consistency? Thank you!

Need to leave right after slow cooker meal done.

I'm supposed to slow cook my lamb blade chops until around 8 PM. I'm making them a day ahead of time. I need to go somewhere at 8 PM and be back by 9-930 pm. Is it OK just to turn off the heat on the slow cooker and leave it on the counter until I get back? I don't wanna stick the slow cooker insert in my refrigerator cause it'll be too hot. Thoughts?

My 91-year-old mother likes to sleep during the day.

My question is should I keep the shades drawn? Or let her sleep with sunlight? I hear sunlight can be too stimulating for them. Thank you
