While visiting friends in Britain we were gifted this book. It has absolutely gorgeous illustrations and it is a joy to thumb through. It also has a great variety of recipes from around the world.
When my wife and I were visiting Belgium we fell in love with the food. We purchased this cookbook. One of my favorite recipes is the Mashed Potatoes with Winter Vegetables. Simple.
Tampa Style Devil Crab
Ingredients
Filling:
1 green pepper, chopped fine
1 onion chopped fine
¼ cup olive oil
2 cloves garlic, diced
1 tsp salt
1 tsp dried parsley
1 oz sherry
½ tsp sugar
1 tsp Tabasco sauce
3 oz tomato paste
1 lb crab meat
bread crumbs
Dough:
½ loaf white bread
1 lb bread crumbs
1 tsp paprika
1 tsp salt
Dredge:
eggs, beaten
1 cup bread crumbs
½ cup flour
Directions
Filling:
Sauté the onion and green pepper in olive oil. Combine the remaining ingredients. Cook
until thick. Add bread crumbs to thicken. Allow to cool.
Dough:
Make the dough the night before. Use ½ loaf of white bread with crust removed. Soak in
water and drain. Squeeze water out thoroughly. Add 1 tsp paprika, 1 tsp salt and 1 lb of
bread crumbs. Combine all well and chill overnight.
To make the devil crab:
take 2 generous tablespoons of dough into the palm of your
hand. Indent with the back of a spoon. Fill with 1 tablespoon of filling. Work the dough
around the filling to form a croquette. Dip croquette in beaten egg. Then roll in a mixture
of 1 cup of bread crumbs and ½ cup of flour. Chill for 1 hour.
Deep fry until golden brown.
Usually served with hot sauce on the side.
I saw Sara Moulton mention this book and I had to have it. A great book just to read. Lowcountry and Southern recipes.
The author submits that what makes a dish chili is the addition of chili powder. A wide variety of chili dishes, each giving homage to its region.
I loved his TV show also. I garantee.

This book was gifted to me by my mom when I first moved out of their house in my early twenties. It was her bible of Cuban cooking. The writer was the famous Las Novedades Restaurant in Ybor City, Tampa.
I still use it and is well worn.
