
Front Motor Fault stranded me twice.
Twice in two months I’ve had it towed to the dealer. Twice, the issue resolved itself at the dealer.

Posting this because Caputo seems to have removed or changed the focaccia recipe on newer Fioreglut bags, and I had to piece it together from an older bag.
I made this today with 750g of Caputo Fioreglut and it came out legitimately excellent — crispy bottom, airy interior, real focaccia texture instead of “GF bread.”
I specifically use 750g because it fits a standard cookie sheet almost perfectly.
Recipe I used:
- 750g Caputo Fioreglut gluten free flour
- 712g water
- 2 packets active dry yeast
- 75g olive oil in dough
- 35g salt
Method:
A few notes:
- I did NOT use convection.
- The dough really likes oil. Don’t skimp on pan oil.
- The rise looked almost too wet before baking but it puffed beautifully.
- Bottom crisped up better after leaving it directly on the hot sheet pan for a few extra minutes after bake.
Honestly one of the best gluten free breads I’ve made. The crumb was surprisingly open for GF focaccia.
Trying to decide if Delta Comfort+ is worth it for our family trip to Copenhagen and would love a sanity check.
