SEATTLE - Hundreds of residents gathered in Seattle's Ballard neighborhood on Sunday to celebrate Jimothy, a viral raccoon with a short spine that has captivated the internet after videos surfaced of him roaming through the neighborhood.

The gathering served as a community celebration, prompting local leaders to issue an official city declaration honoring the animal's widespread popularity.

Official Proclamation Issued for 'Jimothy Summer'

Seattle Councilmember Alexis Mercedes Rinck and Councilmember Dan Strauss, officially proclaimed the season as "Jimothy Summer" during Sunday's event.

2 Fresh Dorade (cleaned)

1 Lemon grated and slices.

1 Orange grated and slices.

1 Large onion.

1 bulb of garlic.

Freshly cut green herbs (Rosemary, thyme, dillweed, parsley)

Sunflower oil.

Ground salt, pepper.

Oven 210cº 30- 40 minutes. (Lowest rung)

Blue cheese chunks.

Black olives sliced and whole.

Grilled red bell pepper strips sliced.

Italian herbs (oregano, thyme and rosemary)

Olive oil.

50g cogollos (Lettuce hearts)

2 hardboiled eggs

2 boiled diced potatoes

1 roasted yellow pepper

1 small red union

20g pine nuts

30g sliced black olives

Lemon zest to taste

60ml extra virgin olive oil

30ml apple cider vinegar

Ground black pepper to taste

Salt to taste

Fresh cut Herbes de Provence to taste.
