portobello mushroom burger, another food bank meal

For the mushrooms,

2 portobello mushroom caps, rinsed and stems removed

1/2 cup balsamic vinegar, the cheap stuff is okay

3 tablespoons oil

aprox 2 teaspoons each garlic powder, onion powder, Italian seasoning

mix all marinade ingredients and choke in a plastic bag with the mushroom caps and squeeze out the air, marinate for 30 minutes, flipping occasionally.

I grilled mine in a cast iron pan approximately 8 minutes each side, flipping a couple times. you want soft but keeping their shape.

For assembling the burgers,

hamburger buns (I toasted mine and melted the cheese on them), onions (I threw mine in at the end of grilling the mushrooms to slightly brown),cheese, lettuce, tomato, mayonnaise.

Banana Nut muffins (contains no nuts)

this is my family's banana bread recipe from my Grandma's community Church cookbook. I don't know if it's a typo or what but we always find it funny that it's called banana nut bread and contains no nuts.

I made them in a mini muffin pan today. took about 20 minutes to bake. I'll transcribe the recipe in the comments

roast beef, mashed potatoes with gravy, and steamed peas with butter. follow up to my last post asking about beef for stew

seared then pressure cooked the beef for 30 minutes with a ranch dressing packet, a brown gravy packet, and a little beef broth. thinned out the drippings a little cuz they were kind of salty and used a cornstarch slurry to thicken them to make the gravy. steamed the peas in a little water in the microwave for about 3 minutes and then added salt and butter.

everything but the spices and peas came from the food bank, the peas came from my garden.

another food bank sandwich

lightly toasted dill rye bread(stuck in the toaster oven to melt the cheese), habanero cheddar cheese, butter lettuce, heirloom tomato of some variety, pickled onions (with apple cider vinegar, coriander and garlic powder), deli ham.

all ingredients except the spices I received from my food bank. I share this to show the different variety of things you can make

orange marmalade with vanilla and ginger

followed the nchfp recipe except didn't have any lemons so just added a splash of lemon juice, and then added some vanilla and ground ginger. this is for my refrigerator and freezer so the substitutions are gine

biscuits and gravy and eggs.

eggs and sausage and milk from the food bank, and got a pack of biscuits for 69 cents on discount rack. had some leftover pickled green onion in the fridge so sprinkled on top for extra

gravy is a good way to stretch your meals farther. for sausage gravy you brown the meat, add a little butter if it doesn't have enough fat, and add a couple tablespoons of flour, cook the flour till it's not all white, and then add milk or water to make the gravy consistency you prefer.
