Vegan substitution cheat sheet with exact ratios for eggs, butter, milk, and cream

Quick reference I use all the time:

- Eggs: 1 tbsp ground flax + 3 tbsp water (sit 5 min)
- Butter: coconut oil 1:1, or mashed avocado for brownies
- Milk: oat milk 1:1 (creamiest) or soy milk (best for baking)
- Buttermilk: 1 cup soy milk + 1 tbsp lemon juice (sit 5 min)
- Heavy cream: full-fat coconut milk, refrigerated overnight, use the thick part

Making natto, followup

I used only about half of the soybeans I soaked. Froze the rest to make soy burgers later.

I used the brand of natto in photo #2 to inoculate the cooked beans. And followed the recipe in my previous post. https://www.reddit.com/r/japanesecooking/s/x8UvneX3Tb

24 hrs in the instant pot on the yogurt setting. 24 hrs in the fridge. They turned out really good. I will freeze these in small containers and take them out one by one.
