Pumpkin Spice No-Bake Cheesecake 🎃🍰

Made a pumpkin spice version of my usual no-bake cheesecake and it came out super fluffy and mousse-like!

My first attempt had a little too much pumpkin/cinnamon, so this is the adjusted recipe I’d use next time:

Pumpkin Spice No-Bake Cheesecake
1 prepared 9” graham cracker crust
226 g (8 oz) cream cheese, fully softened
198 g (7 oz) Marshmallow Fluff
35 g granulated sugar
10 g light brown sugar
200–210 g pure pumpkin
5 g (1 tsp) vanilla
5 g (1 tsp) lemon juice
3 g (~1 tsp) pumpkin pie spice
Pinch of kosher salt
226 g (8 oz) Cool Whip, thawed

Beat cream cheese smooth, then beat in everything except the Cool Whip. Gently fold in the Cool Whip, spread into the crust, cover and refrigerate for 24 hours.

I decorated mine with halved mellowcreme pumpkins and pumpkin Peeps for Halloween. 🎃

The filling set up beautifully—very light and fluffy!
